A piece of mature Bluebird blue cheese is pleasantly salty, piquant, and lactic. At times it boasts strong yeast notes, like a good sourdough or the central flavor of hearty greens.

Category: Soft Ripened - Washed Rind

With apricot, salty mixed nuts and carrot leading the way, Prufrock carries with it wonderful yeasty notes of fresh baked bread. Prufrock has a subtle and modeled orange rind with touches of pink and white; the rind is edible and in fact it adds to Prufrock’s complex flavor profile when eaten.

The New York International Cheese Competition is the first food competition from the International Beverage Competitions Group.  The Competition group holds beer, wine and spirits competitions around the world in New York, Berlin, Melbourne and Asia/Hong Kong.  Their competitions have continued to grow over the past 12 years, and this year they started the New York International Cheese Competition, tasting and judging the finest cheese and dairy products from across the globe.

Adam Levy, the founder of the International Beverage Competitions Group stated,

“What sets us apart from other international competitions is our trade-only blind judging panel who will be judging the products by their category and actual price per pound. At our cheese competition held here in New York City, the importer, distributor, cheesemonger, retailer and restaurant owner will be our judges. We feel that these judges, whose livelihood rely upon their skill set, truly know what the consumer wants, as they receive on a daily basis the feedback from the consumer of what is good and what will sell. Price is a large part of a consumer’s decision-making process, so we feel it is a crucial criteria to include in the judging process.“

land that surrounds us. We work hard because we care and take pride in a job well done.
